For the Will your parents can make individual will or joint will. They can draft the Will themselves or through a lawyer .The Will should list all assets movable and immovable and beneficiary details , signed by two witness in the presence of each other. Registering the Will is not mandatory .For Power Of Attorney it is better to consult an Advocate for drafting it.

At any time with medical certificate of parents do joint will if mother and father jointly or single. You have not mentioned whether property is joint name or single name. You can do the registered power of attorney also.
