Procedure to enter into a contract

Sir, I have talked to a photographer team to shoot a program. They demanded half the amount at advance. I want to do all these things by paper works. Let me know the exact procedure.
In any such case, the only proper procedure would be to enter into a registered Memorandum of Understanding (MoU), clearly mentioning all the salient points of obligation of both parties and consequences thereof.
