My first question to you is has your wife written the same in pressence of a neutral person who has witnessed such document being made, if yes there are high chances you do not have to pay,if the witness speaks for you and even the witness has signed himself or herself while the document was being made by your wife.

The taste of my answer would definitely bitter to you but, if she so demands you are bound to pay. Your document which is simply written over a stamp-paper will protect you until she would go before a court of law for maintenance order.

Marriage Wife has every right to claim Maintenance from her husband. In your Case there is no exception. Written in Stamp Paper has no value in Maintenance matter. so avoid it otherwise, it will be used against you.
if your wife voluntarily left from your house. you first send a Legal Notice under Conjugal Right. Therefore, contact a Lawyer and he will take necessary steps and in future your such step may save from any Maintenance Claim.
