Well, firstly both you and your girlfriend should not be minor. If you are apprehending any legal action to be taken from her parents', I would suggest you to give an intimation in the local police station on behalf of your girlfriend that she is staying with you in a live-in relationship on her own free will. If her parents are still being bothersome, you may file petition for obtaining a restraining order against them.
