Generally, no - since in absence of a signature, it is difficult to prove intent to execute. However, the precise answer would depend on the circumstances of the case. For example, a last will made by an active member of the armed forces (also called a 'Privileged Will') is considered valid even if it is not in writing. The two factors that I would consider before opining are (a) what is the nature of the document that is being discussed? and (b) what are the circumstances surrounding the creation of that document?
