What can be the procedures to be followed to send the legal notice to the client who is not paying after opting for the service and it's been over an year that the client hasn't paid the said amount.

You need to collate the facts of the case and the correspondences along with the documents such as service requests, bills, etc (if any) and approach a lawyer to draft a legal demand notice on your behalf.
