As the lady is from Poland the adoption laws of Poland would apply to her. Need to check the local adoption laws relating to adoption of adults in Poland as certain countries do not allow adoption of adults. If adoption is allowed then certain European countries may have restriction on adopting an Adult. Age and moral grounds for adopting are few restrictions .

You cannot adopt parents, I never come across any provision where you can adopt a parents, yes you can take care of them voluntary or under Maintenance and Welfare of Parents and Senior Citizens Act, 2007, I don't understand the reason why you have to adopt someone if you want to care them, you can do so in current capacity. Adopting foreign kids and vice versa also depends on the treaties between Poland and India, where any treaties establish between two countries to secure their citizen fundamental rights to secure empowerment and natural justice. So I suggest you seek appointment with lawyer honestly tell your motive of adoption and i am sure he/she will find the way out for you.

You cannot adopt a foreigner (or even a non-Hindu.) Usually an application for being appointed a guardian is filed in such cases, however the grounds for such appointment shall have to be made out. Also there shall be an added complication on account of the lady not being amade Indian citizen. First Indian citizenship may have to be applied for, depending on the full facts of the case.
